DIY KIT Process

  • Start by washing the quinoa thoroughly under running water to remove its natural bitterness.
  • Boil water in a saucepan, add the washed quinoa along with salt and a clove of garlic, and cook until the grains turn soft and fluffy.
  • Once cooked, drain any excess water and let the quinoa cool completely.
  • Meanwhile, add broccoli to boiling water and blanch it for 30–40 seconds. Drain and keep aside.
  • Chop the bell peppers and onions into small, even-sized pieces.
  • Heat oil in a frying pan. Add the broccoli first, as it takes slightly longer to cook, and after a minute, add the bell peppers.
  • Add seasonings like oregano, chilli flakes, and salt. Toss everything well for a minute, then add the onions. Toss again for another minute and transfer the vegetables to a large bowl. Make sure the vegetables remain crunchy for the salad to taste fresh and flavourful.
  • In a large mixing bowl, add the cooled quinoa along with the sautéed vegetables.
  • Prepare the dressing by mixing olive oil, balsamic vinegar (always use one-third the quantity of olive oil), honey, mustard, salt, and pepper. Mix or shake well until combined.
  • Pour the dressing over the salad and toss gently so everything is evenly coated.
  • Finish by sprinkling some feta cheese on top to add extra flavour and make the salad even more delicious.
  • Your fresh, healthy quinoa salad is now ready to serve.
